75g sugar
450g mascarpone
2 table spoon dark rum
100ml espresso
(About 16-24MARIE BISCUITS), depending on size of dish
Cocoa powder
A cup of plain water
1)Whisk the mascarpone and sugar until pale and voluminous whisk
a little at a time, until smooth and well combined
2)Stir the plain water into the cocoa powder and pour into a
shallow dish. Dip each biscuit into the liquid until it is a pale brownish
colour, then arrange to cover the base of a shallow glass dish. Spoon a third
of the mascarpone mixture on top, followed by a good sprinkle of cocoa, then
repeat the layers, finishing with a layer of the cheese and cocoa.
3)Cover and refrigerate for two to three hours before
serving . you may need to dust with a little more cocoa to make it look
respectable.
That was what I had been done for last two weeks. I made it
by myself without any helps from anyone. But I am so happy as my course mate
would like asked me to do it for some more.
